Pumpkin Bread (or muffins)
1 1/2 cups sugar (or honey...I reduced this to 1 cup when I made yours!
1 cup pure pumpkin (not pie filling)
2 tbsp vegetable oil (original recipe calls for 1/2 cup, but I've reduced and it still works)
1/3 cup water (unless you've used honey)
2 eggs
1 3/4 cups flour (I did 1 1/4 of whole wheat flour with 1/2 cup Teff flour)
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1 tsp baking soda
1/2 tsp salt

Bake at 350 (time depends on loaf pan or muffin cups...I think the muffins are around 20 mins??)

Hemp Hearts and Dark Chocolate

Dark Chocolate (Organic/Free Trade with at least 70% Unprocessed cocoa)I purchase a couple of bars.

Hemp Hearts 1 Cup (You can purchase in the Health Food Section at Zehrs'. You can also purchase in bulk at Bulk Barn)

Organic Thompson Raisins (Purchase at Zehrs'

Maraschino Cherry (Wash to reduce syrup content and slice into teeny tiny pieces)

Crushed Almonds would also taste great!

Couple of candy molds (Purchase at Bulk Barn for three dollars a sheet--- two sheets are enough)

Slowly melt chocolate (Don't leave the kitchen) When melted and warm drizzle a layer of chocolate into mold.
Sprinkle teaspoon of hemp hearts over chocolate.
Add pieces of cherries.
Cover with chocolate.
Sprinkle hemp hearts over chocolate and then add raisins.
Place in fridge and let cool. Pop out chocolate, store in container.

Continue process until all of your melted chocolate has been used.

For and ethnic flavor……
Tandoori Chicken Salad Sandwich
3 ½ oz cooked chicken breast, torn into thick shreds
1 ½ Tbsp chopped, seeded cucumber (with peel)
1 Tbsp chopped mango
1 Tbsp chopped red onion
1 Tbsp light mayo
½ tsp tandoori paste
½ tsp fresh-squeezed lime juice
2 slices whole-wheat or grain bread

In a medium bowl, mix all ingredients and enjoy on bread as a sandwich or on Melba toast etc.
Ps you can find tandoori paste in most supermarkets. A few raisins make a good addition, believe it or not.
